Caruso Chicken

Ingredients / Makes 4 Servings

4 boneless chicken breasts,
4 slices of Caruso’s Italian Torta,
4 slices of prosciutto, Olive oil

Preparation

  1. Preheat oven to 350 degrees
  2. Cut a deep pocket in the thickest part of the chicken breast
  3. Stuff a slice of torta in the pocket
  4. Use a toothpick to close the pocket securely
  5. Wrap a piece of prosciutto around the chicken, covering the slit
  6. Heat 2 tablespoons oil in non-stick saute pan
  7. Add chicken and brown on both sides
  8. Finish baking in oven 12-15 minutes
